Salmon roulade with green cheese

200 g of green cheese, lemon juice, 160 g of thin slices of smoked salmon, 2 tablespoons of fir honey, 2 tablespoons of yellow mustard, 125 g of cherry tomato,
dill, rucola, 100 g of rampion

Spice up the green cheese with pepper and lemon juice.  Lay the slices of salmon on a transparent foil, sprinkle it with green cheese and roll the meat into a roulade with help of the foil. Put everything in the deep freezer for about an hour. In the meantime, mix fir honey and mustard and add ground dill. Wash and dry rucola, rampion and tomatoes, then decorate the plate with them. Take the roulade out of the deep freezer, cut it into slices and lay it on the prepared plate. Sprinkle the prepared dish with balsamic vinegar and olive oil and add some red pepper. Serve it cooled with honey and mustard sauce.
